Tomato Basil Gazpacho Soup


MmmMmm!  Indulge yourself in this beautiful and hearty gazpacho soup!  One of the things I love about having a fully raw diet is how simple ingredients can create healthy, satisfying, and delicious recipes!  You won’t feel bloated or have an upset stomach after a meal, even while your belly is completely full and content!  There are so many different textures and flavors in this soup that it will appeal to everyone.

I have been on a huge tomato kick recently!  Did you know tomatoes are red due in part to their high amount of lycopene, a powerful antioxidant and can help protect against prostate, lung & stomach cancer?  Tomatoes are a rich source of  vitamins K, A, C, folate and minerals like potassium, copper, and manganese.  They are great for your skin, hair, heart health, blood pressure, improving vision, and fighting osteoporosis.   Eat up!



Yields 1

  • 1 1 /2 lb Vine Tomatoes
  • 1 Scallion
  • 1/2 Red Pepper
  • 1/2 Lemon (juiced)
  • 1/3 cup Sun Dried Tomatoes soaked for 15 minutes (Do NOT use ones in oil or have anything added like salt)
  • A generous handful of Basil
  • 1 cup Zucchini (diced)
  • 1 cup Cucumber (diced)
  • 1 cup Cherry Tomatoes (diced)
  • 2 TBSP Shallot (diced)

*** Note:  For a heartier soup, double the zucchini, cucumber, and cherry tomatoes in the recipe.

Update:  I made this tonight (April 27, 2015) and added chopped super ripe juicy mangos about 2 cups.  It gave it an AMAZING tropical flavor! ❤ )



  1. Add the first 6 in in a blender.  Blend on low for a until a chunky salsa texture is acquired.  Pour half of the mixture in a bowl.
  2. Blend the rest of the mixture at a high speed until smoothie.  Pour into the same bowl.
  3. Mixture in the remaining ingredients and ENOY!! Xx
